The aim of this study was to evaluate the antimicrobial effect of Plantago ovata (psyllium) extract in both conventional and encapsulated forms on the behavior of Streptococcus iniae bacteria in silver carp fillets during refrigerated storage. For this purpose, after preparing and inoculating fish fillets with Streptococcus iniae, two concentrations of conventional psyllium extract (0.1% and 0.3%) and two similar concentrations of encapsulated psyllium extract (0.1% and 0.3%) were added to the samples. The samples were stored at refrigerator temperature for 12 days, and bacterial counts were performed at intervals of 0, 4, 8, and 12 days. The results of microbiological tests showed that although the encapsulated form of psyllium, particularly at 0.3% concentration, exhibited greater reduction in bacterial growth and count compared to other treatments, no statistically significant difference was observed between conventional and encapsulated treatments (p>0.05). However, the bacterial growth rate in the treatment containing 0.3% nanoencapsulated extract was slower than in other treatments. In general, the results of this study indicate that the application of psyllium extract, especially in nanoencapsulated form at 0.3% concentration, can be effective in reducing the growth of Streptococcus iniae in silver carp fillets. Nevertheless, to achieve stronger antimicrobial effects, it is recommended that higher concentrations of psyllium extract along with more comprehensive evaluation of microbiological and chemical parameters be investigated in future studies.
