Biochemical composition and its relationship with some biological and physiological indices of golden gray mullet (Liza aurata) in the Caspian Sea. 3 2016; 8 (3) :45-60

This study was conducted to examine the correlation of biochemical composition (protein, fat, moisture, ash) and energy content of fillets with the season, gender, reproduction period and the living environment of golden gray mullet, Liza aurata. The relationship between biochemical compounds with biological parameters (weight and length) was also examined. To do so, 100 adult golden gray mullets were supplied from 10 sites of various coastal areas (wetland and deltaic) in the non- breeding season (spring) and breeding season (fall), 2014 in the southern areas of the Caspian Sea. The body composition was measured through standard methods AOAC. Mean protein, fat, water, ash, and energy content of the golden gray mullets were 22.33, 3.08, 77.76, 1.40%, and 649.71 kJ per 100 g of fillet, respectively. Comparison of chemical constituents in spring and autumn shows reduce fat and protein content and increase muscle moisture content in fish reproduction period. Fat, protein and energy content of golden gray mullet fillets in autumn (during reproduction) was significantly lower than in the spring. The comparison between male and female golden gray mullet biochemical compounds showed that the amount of fat, protein and ash in males are significantly higher than females but the weight, length and moisture in males is lower. Reduce body fat and protein content in females, elderly replaced by water to compensate for differences in body weight. Based on the results, season, gender, reproductive periods and feeding influenced the Bioassay index and biochemical composition of the fish, and the differences in this regard were significant.
